Why does blood sugar concentration stay relatively stable in a person whose diet
is low in carbohydrates?

Answer:

Carbohydrates are mainly starch. Starch is a big molecule & cannot pass into the bloodstream so is broken down into glucose. Glucose is a sugar.

Some carbohydrates probably do contain glucose anyway.
